ROW- the Ice Cream sandwich edition

Ok, it's hot. It's damn hot. I made these homemade ice cream sandwiches for book club this week and they totally hit the spot, it got a definite "slurp slurp" from my food critic. They melted fast but the cookies were nice and chewy, so somehow that makes everything better. 

I got the recipe from People and it was pretty easy to follow but I found you have to let each batch cool on the baking sheet for about 5 minutes before trying to remove them otherwise you're left with torn parchment paper, crumbly cookies and a grumpy chef. 

Also it's LAUGHABLE how little my cookies ended up looking like the pic shown. Seriously laughable. Please to enjoy the difference hahaha!!!

Who cares, they were good. I filled them with vanilla, mint chocolate chip and blueberry pomegranate chocolate chunk. Slurp.
