First I'll start with the epic fail. I tried making samosas from my awesome Vegetarian cookbook this week and holy moly, those suckers were difficult. First of all, the recipe called for Shortcrust Pastry, and we went to 3 different grocery stores and nobody carried it, so I had to make my own. That stuff is really temperamental! I'm used to working with temperamental people, not dough. Epic fail #1. Secondly, those puppies took so long to make! The cashew and potato filling was a labor of love and then stuffing the fragile and delicate pastry was like stuffing coins into wet kleenex. There were some F-bombs dropped in the kitchen, I'm sure. And then 3rd fail, I've never deep fried anything in my life and it showed. Of a batch of 15, I only had 2 - count 'em 2 successful samosas! The rest were all blackened or fell apart in the oil. hahahahaha! That's about 5 hours of labor for 2 samosas that look all lumpy and malformed like they were made in a nuclear waste site. Not my best effort, moving on.
This next recipe is ROCKING!!! Pretty easy too, takes only about 30-45 minutes and is super delicious. I double the amount of shrimp that it calls for because, really, if 2 pounds of shrimp is good - wouldn't 4 pounds be better? The dish itself doesn't really have any heat to it, so I cut up jalapenos from our backyard to sprinkle on top with some cilantro...delicious! I serve it over rice, though you can probably just serve it by itself, it's so delicious. The next day it's great to heat up in tortillas, or again, just by itself. Thank you People Magazine - not only are you my source of all information, you fill my belly with goodness. The food critic on the couch next to me gives it "two unidentifiable tomato shapes up"...whatever that means. There were some pretty happy nom nom noises coming from him, that's all I know.
I think this is one of those situations where the photo below doesn't translate well, but trust me, this is such a great recipe. See the pretty professional photo above, it doesn't look so much like, well...cat food.
