But while we've actually discovered some descent gluten free breads and pastas ( and we've even become"those people who bring their own soy sauce to sushi hahaha!) I haven't found any lasagna noodles that are safe. And that makes me grumpy. So I've been looking for a good substitute recipe that doesn't taste like cardboard and remind us of our current plight. And huzzah!!!!!
Found this recipe on Atkins and it was soooooo amazing. I made a few substitutions to make it a bit healthier: frozen kale instead of spinach, low fat ricotta and mozzarella instead of the real deal and low fat turkey instead of ground beef. Boom shalaga. Soooo creamy good, even my eggplant-hating food critic went back for seconds AND ate it for leftovers the next day. Miraculous!!!
