ROW - the Stuffed Poblano edition

Hold onto your pants...this is one delicious recipe.  Even my non-veggie hubbs LOVES this recipe - it's so hearty, you'd never know there was no meat in it.

The recipe itself isn't that difficult, the only thing I found tough was de-seeding the chilies, it got a little messy.  But, this was the 2nd time I've made this and I realized it's no big woo if they don't look perfect because once you stuff them, you end up doing a little "surgery" to put them back together and top the whole shebang with cheese anyway, so no use worrying about it.

In terms of the recipe they give for the homemade salsa, it's not spicy enough for us, so I add half a can of chipotle chilies in adobo sauce chopped up - slurp!  The dish itself isn't spicy, so I like the salsa to add the kick.

GET IN MY BELLY!!!  I would totally recommend this recipe - it's so dang good!!!

(I know you're supposed to always reference your source, by the way, but I have NO idea where I got this!  I seem to remember a coworker gave this to me but I can't remember who...so there you go.  Whoever you are - you rule).


The food critic next to me gave it a "holy crap babe, this is so freakin' good"!
